Muah ha ha...Dr. Bombay's Rice and Curry...an old school song I forgot about until Josh brought it up a while ago. ^_^ A lot of people have asked about the Coconut Orange Cupcakes below - for the recipe, I mean. So I'll just post it in the xanga comment section below that post. Enjoy if you like. =) Dinner tonight: Curried Chicken Wings, with Rice and Brocolli. Deliciouso! ^_^
Quickie Recipe: 1. Cut about 10 Chicken Wings at all the joints. If you don't want the tips, save them for something else, or toss them. 2. Combine 1/4 Cup Melted Butter, 1/4 Cup Honey, 1/4 Cup Dijon Mustard, 2 teaspoons Curry Powder in either a large zip-loc bag or a bowl. 3. Add chicken to the marinade and mix them up together well. Let it sit in the marinade for about 2 hours in the fridge, at least. Turn the chicken once in a while to make sure flavor is fairly distributed between all the wings. =) 4. Remove chicken from the marinade (no need to drain; just pick them them) and place it in a greased 9x13 baking dish. Bake at 325 degrees for about 45 - 55 minutes. |
